Tītī, also known as muttonbird or sooty shearwater, is a naturally salty, rich, ocean-tasting delicacy.
These birds are harvested annually, from April to May on Rakiura (Stewart) Island and brined.
To cook, we recommend gently boiling water for ten minutes, and repeating this process to your satisfaction, to your taste, simply test the water. Finish by roasting in an oven or BBQ on a high heat to crisp the skin.
